Based on Shinshu miso nurtured in wooden barrels used for nearly 100 years, developing unique "taru-guze" (barrel character), we layer carefully selected cheese, peanut paste, fish sauce, spices, and seasonings multiple times, kneading them at different intervals to create a rich, umami-concentrated miso.

Our original chili pepper spice blend "Kara," made from various varieties, creates complex stimulation combining sourness, sweetness, bitterness, spiciness, and aroma. Meanwhile, "Shibi" is a fragrant numbing oil made from Wakayama budo sansho and Sichuan huajiao with aromatic vegetables, slowly extracted at low temperature. This fusion of "Kara" and "Shibi" is Kikanbo's signature.

Animal-based soup made by simmering pork bones and chicken bones with aromatic vegetables and spices for over 10 hours. Layered with fragrant seafood soup to create a double soup that delivers deep richness and body. Furthermore, by stir-frying aromatic vegetables, original miso, and chili peppers over high heat in a wok for each order, every bowl releases aromatic fragrance and robust umami.
